#mituFIT: Crunch-tastic Stuffed Peppers

Stuffed Peppers with Veggie Mix

Ingredients

10 mini peppers (choose different colors)

½ jicama

1 cucumber

2 carrots

1 lime

Cayenne pepper to taste

Paprika powder to taste

Directions

1. Wash and rinse your veggies.

2. Shred the jicama, cucumber and carrots into a small bowl.

3. Cut lime in half and squeeze on top of your shredded veggies. Add cayenne and paprika powder to your mixture.

4. Cut the stems off of your peppers and remove the seeds and membranes.

5. Stuff with your veggie mix into the peppers, place on a serving platter and enjoy.

Pimientos Rellenos con Mezcla de Vegetales

Ingredientes

10 mini pimientos de distintos colores

½ jícama

1 pepino

2 zanahorias

1 limón

Pimienta cayena al gusto

Polvo de paprika al gusto

Instrucciones

1. Lava y desinfecta tus verduras.

2. Ralla el pepino, la jícama y las zanahorias en un plato hondo pequeño.

3. Exprime el limón en las verduras ralladas, agrega la pimienta cayena, la paprika en polvo y mezcla.

4. Corta los ramos de cada pimiento y con la ayuda de una cuchara límpialos por dentro sacando las membranas y las semillas.

5. Rellena cada pimiento con la mezcla de vegetales, sírvelos en un plato y disfrútalos!
