These Mexican-Inspired Dishes Created From Leftovers Will Make Your Mouth Water With Jealousy

Using up leftovers to create your next culinary Mexican food masterpiece just takes some thought, ingenuity and knowing what to do with salsa and queso. Get yourself a dish that can do both and look at these dishes for some inspiration for your next sit-down lunch or dinner. Seriously. After enjoying these Mexican-inspired leftover creations will change everything you know about food.

1. Tacos de Pozole

What do you do when it’s over 95 degrees outside and you cannot for the life of you eat another bite of your mama’s steaming pozole? Make the meat into tacos. You already love the soup and the meat. Why not give it new life?

2. Pollo Shakshuka

This Insta-Chef made an incredible meal thanks to some photo inspo. Pollo made with red salsa was transformed into a Tunisian-inspired shakshuka by way of adding some eggs and cotija cheese.

You know when you head to a Mexican restaurant and your main dish comes with enough rice and beans to serve the whole table. Instead of chucking them directly into the trashcan, make another easy weeknight meal. Stuff some bell peppers and enjoy a delicious lunch.

4. Tamale Frito Pie

Our moms usually made a breakfast meal with leftover tamales by frying cut up pieces with a side of eggs. Instead, make it a meal by mixing her tamales with Fritos and melted cheese. Ok, we see you, leftovers.

5. Mexican Pasta

Did you go overboard on the BOGO sale at the grocery store for pasta and tomato sauce? Add some cotija cheese to your pasta and bake it like this catering company did. You can still make something delicioso on the cheap.

6. Fideo Pasta

If you’re like us you might have not added enough caldo to your sopa de fideo like abuela’s recipe calls for. No need to worry, fam. Use some of that drier (but still salvable) sopa de fideo to make a pasta dish. Sprinkle some of your go-to shredded cheese and top it with some scoops of avocado.

7. Grilled Veggie Tacos

We know we *should* be eating more vegetables, but sometimes it’s hard. No excuses when it comes to these veggie tacos. Grilled veggies from your meal prep can be sliced and diced with soft-boiled eggs and sprinkled with seasonings like black sesame to make some bomb tacos out of leftovers.

8. Pan Dulce Ice Cream Sandwiches

Did you go a little overboard with the pan dulce stand at the bakery? Use some of those pan dulce breads for another round of dessert. Inspired by Horchateria Rio Luna, cut up your bread and stuff with your favorite ice cream flavor for a sweet treat.
